Blueberry Breakfast Bars {Yogurt & Granola}

Breakfast lovers will love these blueberry breakfast bars. Start with a layer of crunchy granola, layer it with blueberry yogurt and fresh blueberries and you’ll have a delicious and filling blueberry breakfast casserole you can cut into bars and even take on the go!

Breakfast can always be a challenging meal. You’re tired and want to reach for something quick, which often ends up being something full of carbs and sugar. It tastes great but you find yourself hungry again just a short time later.

Make these bars up ahead of time and grab one while you’re waiting on your morning coffee to brew! They’re crunchy and sweet but with enough protein to keep you going for a while.

Check your cupboard

You will need a few standard items to make this recipe. Check your cupboards for the following:

Go ahead and line your cookie sheet and baking dish with a piece of parchment paper for later.

These bars do require overnight refrigeration! They’re a great project to make on the weekend as part of your meal prep routine and then eat them all week…if you can make them last that long!

Making the granola crust

The first thing you need to do is to make the granola crust. This will provide a little crunch to your bars and will pair nicely with the yogurt.

Preheat your oven to 350 degrees.

Granola Ingredients

  • 4 cups of oatmeal
  • 1/4 cup of honey
  • 1/2 cup of brown sugar
  • 1 Tablespoon of cinnamon
  • 2 Tablespoons of maple syrup
  • 1 teaspoon of vanilla
  • pinch of salt

Take a medium sized bowl and add all of the ingredients. Give them a good mix until all of the oatmeal is coated.

If a spoon isn’t doing the job don’t be afraid to use clean hands to mix it all together.

Line a cookie sheet with a piece of parchment paper and spread the granola out into a thin layer.

Bake in the oven for 10-15 minutes until the granola gets golden brown and crunchy.

Allow it to cool for a few minutes on a wire rack. (While it’s cooling go ahead and scroll down and fix up the bar filling).

Once the granola is cool enough to touch, but still warm. Press it firmly into the bottom of your baking dish to make the crust.

It’s a bit like when you make rice krispie treats. You want it cool enough to not burn your hand but warm enough to work with. If it gets too hard it won’t shape nicely and you may have to warm it a bit or add a little honey to help things stick together.

Once you’ve got it all pressed into the bottom of your pan throw it in the freezer for a few minutes to firm up.

Making the bar filling

Making the filling part is simple. Take some blueberry yogurt, I like to use the Greek kind which is a little less sweet and has a little more protein in it.

Mix that with 1 teaspoon of vanilla and 1/2 cup of your fresh blueberries. (Make sure to drain and rinse your berries and allow them to dry a little on some paper towels)

You can use frozen blueberries but they won’t have the same pop and may be a bit watery. Fresh is always best for these bars.

How to assemble your blueberry bars

Grab your pan out of the freezer and check that the granola has completely cooled.

Next, spread your filling across the top making an even layer.

Last, sprinkle the remaining fresh blueberries across the top. You can tap them gently if needed to ensure they settle into the yogurt.

Cover your baking dish with aluminum foil and stick it in the freezer overnight to firm up.

Cut them into 2×3 bars and enjoy them! It will make 12-15 bars depending on the size that you cut them.

Ingredients

Granola Ingredients

  • 4 cups of oatmeal

Blueberry Bar ingredients

  • 1 teaspoon of vanilla
  • 6 cups of Greek yogurt (blueberry flavored)
  • 1 pint of fresh blueberries

Instructions

  1. Line a cookie sheet with parchment paper, and preheat the oven to 350 degrees.
  2. In a medium bowl mix the oatmeal, honey, brown sugar, cinnamon, maple syrup, vanilla, and a pinch of salt until well blended.
  3. Once mixed spread the granola into a single layer on the parchment paper. 
  4. Bake for 10 - 15 minutes, or until the granola is golden brown and crunchy. Remove from the oven and allow to cool on a wire rack.
  5. While the granola is cooling, rinse the blueberries in a colander under cool water, and turn out on to paper towels to drain. 
  6. When the granola has cooled to the touch, but is still warm, line the bottom of the 9 X 9 pan with parchment paper, and press the granola evenly into the bottom of the pan to make a crust. Place in the freezer. 
  7. In a medium bowl, add the the blueberry yogurt, vanilla, and 1/2 cup of the rinsed and drained blueberries, and mix well. 
  8. Remove the granola from the freezer, and spread the yogurt mixture on top of the granola. 
  9. Sprinkle the remaining blueberries on top of the yogurt.
  10. Cover the dish with foil, and place in the freezer overnight. 
  11. The next morning, remove blueberry bars from freezer, cut into 2 X 3 bars, and serve.
