No-bake desserts are awesome in so many ways. This Easy Key Lime Pie Lasagna is the ultimate easy no-bake dessert. Using just a few ingredients, you’ll be able to create a dessert that wows your guests and their taste buds. The taste of key lime has always been a favorite around here. Key Lime Pie Lasagna

Layered desserts have really been my thing lately. I started with a raspberry chocolate version and have made a delicious banana cheesecake lasagna too!

While I’m a big fan of fruity flavors my husband loves key lime. So, I decided I had to create this key lime dessert lasagna for him. My mom likes key lime too and was my official taste tester while I added the lime juice since I myself do not like limes.

Dessert lasagnas are so easy to make and I absolutely love that they require no baking. That makes them a perfect summer dessert when it’s too hot for turning on the oven. They’re also ideal for busy meals when you need to save room in your oven for other recipes.

Ingredients

  • 1 pack of graham crackers
  • 5 tbsp butter
  • 1 box coconut cream pudding (3.4oz size)
  • 1 cup milk
  • 8oz cream cheese
  • 1/2 cup key lime juice (juice from 12-16 limes)
  • 1/4 cup sugar
  • 1 tub cool whip

How to Make Key Lime Pie Lasagna

Crust

1 – Crush 1 pack of graham crackers. Use a food processor or stick in a ziplock back and break up with a meat mallet or rolling pin until you have a fine dust.

2 – Melt 5 tbsp butter in the microwave. Add the melted butter to the crumb mixture and combine until all crumbs are wet.

3 – Press into the bottom of an 8×8 pyrex dish to create a crust. Place in the freezer to set while you make the next layer.

Pudding Layer

4 – Whisk coconut pudding mixture with one cup of cold milk. (That’s half the milk that the box calls for.)

5 – Fold in 1/2 cup of whipped topping using a silicone spatula.

6 – Spread the pudding over top of the crust to create an even layer then return the pan to the freezer to allow the layer to set.

Cheesecake Layer

7 – In a medium bowl mix together cream cheese (softened), sugar, & key lime juice. Taste and add more lime juice if needed. Add a tablespoon of milk if it’s too thick.

Optional: Add 3-4 drops of neon green food coloring so the layer will look a bit more green.

Be sure to taste this layer before moving on. Limes will have a slightly different flavor based on ripeness and can give varying amounts of juice so taste it and add more juice if you need a stronger flavor.

8 – Fold in 1/2 cup of whipped topping.

9 – Spread in an even layer on top of the pudding. Place back in the freezer to set before topping.

Topping

10 – Spread remaining cool whip over top to create a light and airy finishing touch.

Optional: Sprinkle lime zest or crushed graham cracker on top to pretty it up.

11 – Allow to set in the fridge for 3-4 hours before serving.

Can I replace key lime with regular lime?

Key limes do have a slightly different flavor than regular limes. But, if you need to use regular lime juice start with only 1/4 cup then give it a taste and add from there.

Regular limes tend to be a bit more bitter and acidic as well as having a stronger flavor but it’s totally possible to switch them out.

While this is not key lime pie, it’s still a yummy dessert that has the same idea. The delicious lime coconut combo in this recipe is sure to please. Key lime dessert lasagna is a perfect summer dessert treat, but feel free to eat it any time of the year.

Instructions

  1. Crush 1 pack of graham crackers.
  2. Melt 5 tbsp butter then combine with the graham crackers until all the crumbs are wet.
  3. Press into bottom of an 8x8 pyrex pan to create a crust. Place in the freezer to set while you make the next layer.

Pudding Layer

Notes

Don't have key lime juice? You can use regular lime juice in a pinch. Start with only 1/4 cup or less and adjust to fit your tastes.
