As a mom, I’m always looking for inexpensive ideas to make for dinner. This meal makes so much food and you’ll have leftovers for days. If you have a big family, then you can easily appreciate leftovers and what they mean for your family. This meal is less than $10 to make and it’s so delicious!

One Pot Tortellini Recipe

There may come a weeknight or a weekend that you want a home-cooked meal, but you don’t want to spend a lot of time in the kitchen. This recipe is totally the recipe to make! This tortellini recipe is easy, quick, and family-friendly.

Ingredients:

  • 20 oz container of tortellini (frozen is ok too)
  • 1 ham steak diced
  • 1 small bag of frozen peas (I used 1 ½ cups)
  • 1 ½ cups of shredded Monterey Jack cheese
  • 1 tbsp butter
  • 2 cloves garlic, diced or use jarred minced garlic
  • 1.5 cups of chicken broth
  • ¼ cup heavy cream
  • Salt and pepper

You can use any type of chicken broth but I always make mine from Better than Bouillon.

Making Ham and Pea Tortellini

Before you get started dice your ham and your garlic if you aren’t using jarred minced garlic (one of my favorite inventions ever!)

1 – Start by melting the butter in a large stockpot or dutch oven.

2 – Add the garlic and saute for 30-60 seconds.

3 – Add the diced ham and cook for another minute.

4 – Once the garlic and ham have gotten seared a bit add the chicken broth and the tortellini.

5 – Cover the pan and bring it to a boil. Cook for 8-10 minutes until tortellini is tender.

6 – Slowly stir in ¼ cup of heavy cream.

7 – Next, add 1 ½ cups of peas.

8 – Stir in 1 cup shredded cheese and allow to cook for a couple of minutes until peas have cooked and cheese is melted.

9 – Optional: Top with remaining ½ cup cheese.

This dish is creamy and delicious yet filling unlike many pasta dishes with the addition of the ham and peas. The ingredients are simple so even the kids will enjoy it and it will quickly become a family favorite!

Can You Use Leftover Ham?

Leftover ham is perfect for this dish! Just dice it up and toss it on in. I usually use a ham steak but I’d say you’ll want about a cup of diced ham. You can always use more or less according to your preference.

Diced lunch meat will work as well if that’s what you have on hand. Black Forest Ham will add some extra flavor to the dish.

Notes

If you hate chopping garlic like I do you can used jarred minced garlic instead, I always do!
