St. Patrick’s Day Cake Pops Recipe {St. Paddy’s Day Dessert}

These St. Patrick’s Day cake pops are a fun and festive way to celebrate the holiday!

With their delicious flavor, vibrant green coating, and festive sprinkles, they’ll be a hit at any gathering. Have fun making (and eating) these delightful treats!

Ingredients

Cake Ingredients

  • 1 package white or yellow cake mix
  • 1 ccup water
  • ½ cup oil
  • 3 eggs
  • Green food coloring

Frosting Ingredients

  • 4 cups powdered sugar
  • 1 cup unsalted butter, softened
  • 1 tsp vanilla
  • 1 tsp salt
  • 3 Tbsp milk

Decorations

  • 2 cups white chocolate chips or candy melts
  • 3 Tbsp St. Patrick’s Day themed sprinkles

How to Make this recipe

Preheat the oven to 350 degrees

1 – Mix together the cake mix, water, oil, and eggs until well combined.

2 – Add in food coloring until it’s your desired shade of green. It may lighten slightly when baked.

I like to use this food coloring but any will do.

3 – Pour the mixture into a cake pan that is sprayed or lined.

Bake for 30-35 minutes until the center is set. Allow it to cool completely before moving to the next step.

4 – Once the cake is cooled, prepare the frosting.

Start by combining half the powdered sugar, butter, vanilla, and salt.

5 – Add the rest of the powdered sugar and the milk. Mix until the frosting is fluffy and smooth.

6 – Break the cake into pieces and place in a clean bowl. Add in about 1 cup of the frosting and mix until just combined.

If the cake still seems dry or won’t stick together you can add a bit more frosting.

7 – Using a cookie scoop or a tablespoon to measure out the dough and roll into balls.

Set each dough ball on a piece of parchment until you’ve shaped all of the dough.

8 – Place the dough balls into the fridge or freezer for 15-30 minutes, until firm and well chilled.

9 – Just before removing the dough from the fridge you’ll need to melt the white chocolate or candy melts.

Place them in a microwave safe bowl and heat in 30 second increments until melted, stir in between heatings.

10 – Use a spoon to dip a cake ball into the melted chocolate.

Once coated, remove and place back on the parchment. Don’t have too much excess chocolate.

Sprinkle immediately with St. Patrick’s Day themed sprinkles so they can stick.

Can I put these on a stick?

Of course! If you want these on a stick, you’ll add them just before you dip. Dip the stick in the melted chocolate, then push it gently into the cake pop. Then dip the cake pop into the chocolate to coat it.

I find them easier to eat without the stick and they don’t fall off causing you to lose half your treat.

What to do if the dough is falling apart.

If the dough isn’t sticking together well try adding a bit more frosting so the dough is moist enough to stick together.

They may also need more time to chill, if they are warm they may start coming apart when put in the hot dipping chocolate.

What is the best way to store them?

Store them in an air tight container for up to 3 days.
