Easy CrockPot Beef Stroganoff

Beef stroganoff is a classic dinner recipe. It’s delicious and this version makes it super easy to make. Made in a crockpot or slow cooker the meat will be super tender!

If you’re looking for a made from scratch type recipe this isn’t the one for you. It uses a lot of workarounds to make prep quick and easy. It’s the perfect meal for any night of the week.

This recipe is one of my husband’s favorites and one we frequently make when having company. Neither of us are big fans of mushrooms but there are only little specks from the mushroom soup.

Beef Stroganoff Ingredients

This recipe is actually really simple to throw together. You’ll need a CrockPot of course and the following:

  • 1-1.25 lbs beef stir fry strips
  • 2 cans cream of mushroom soup
  • 1 cup beef broth
  • 1 tsp worcestershire sauce
  • 1 tsp minced garlic
  • sprinkle of pepper
  • sour cream

Meat

You can use your choice of beef cut into strips but I like to make it easy by buying pre-cut beef stir fry strips. They often cost a little more this way but a couple dollars is worth saving the time chopping meat to me.

Beef Broth

You can use pre-made beef broth but my favorite things for broths is a product called Better than Bouillon. It’s cheaper than canned or boxed broth and I can make just the amount I need. Plus it keeps for a long time in my cupboard so I’m not running out to grab it for every recipe.

Minced Garlic

One of my other favorite kitchen hacks is jarred minced garlic. I’m a super slow chopper and hate having fingers that smell like garlic for days.

By keeping a jar of minced garlic in my fridge I can quickly add some to any meal without the time, fuss, and smell.

Stroganoff Recipe Directions

Pull out that CrockPot in the morning so everything can cook low and slow for 6-8 hours.

You can mix everything up in a separate bowl or in the crock pot insert itself.

Add in the cream of mushroom soup, beef stock, worcestershire sauce, minced garlic, and a sprinkle of pepper.

Give everything a good mix. Then, add in the meat and mix so that the meat is coated and mostly submerged. I usually use a pair of tongs so I can mix and separate but a large spoon will work as well.

Put the lid on the CrockPot and cook on low for 6-8 hours. You can give it a stir halfway through if you like to ensure the meat is staying wet.

When it’s time for dinner put your noodles or rice on to cook. Give the contents of your CrockPot a good stir then add in a dollop of sour cream. Stir to combine.

Give it a taste and add more sour cream if needed. You can also add a bit more beef stock if it needs a beefier flavor.

It should taste a bit salty. When put over the rice or noodles they will complement each other and it won’t taste as salty.

I usually serve mine over egg noodles but feel free to use your favorite noodle or even rice if you prefer. Enjoy!

Crock Pot Beef Stroganoff

Ingredients

  • 1.25 lbs beef stir fry strips
  • 2 cans cream of mushroom soup
  • 1 cup beef broth
  • 1 tsp worcestershire sauce
  • 1 tsp minced garlic
  • sprinkle of pepper
  • 1 tbsp sour cream

Instructions

    1. Mix up the cream of mushroom soup and the beef stock.
    2. Add the minced garlic, worchestershire sauce and some black pepper and stir it all up.
    3. And your meat and mix to coat the meat with your sauce. You want to make sure you have enough to cover all of your meat so you may need a bit more or less depending on the quantity of meat. You can't go wrong with extra sauce.
    4. Cook in the CrockPot on low for 6-8 hours.
    5. Taste and add a little more beef stock if you want a beefier flavor. Then add sour cream a dollop at a time. Stir and taste until it has the flavor you desire. (It may taste a bit salty, that's perfect as the noodles will help to balance the salt)
    6. Serve over egg noodles or rice if you prefer.
