Amazing Creamy & Savory Potato Soup (Instant Pot Recipe)

You’ll love this upgrade to the classic potato soup recipe. Herbs will add extra flavor and by using your Instant Pot or other pressure cookers the soup will be ready in just 30 minutes. (You can still make it on the stovetop too if need be).

It’s the perfect creamy soup for a cold winter night or when you’re just craving some good comfort food.

Growing up potato soup was a staple. My grandmother first taught me how to make it and for years I’d still call her and ask her how to do it. It was one of the few meals that all of us grandkids enjoyed so that made it a winner in her book.

Recently, a momentous thing occurred, I had her over for dinner and made potato soup…and she asked me for my recipe!

My grandmother has always made hers the old fashioned way, on the stovetop. There’s nothing wrong with that and you can easily adapt this recipe to be made on the stovetop. But as a mom of two little girls my time is short and dinner time is early.

I just don’t have time to wait for my potato soup to simmer for an hour so that the potatoes can get nice and soft. Instead, I learned how to make a simple and easy version in my instant pot! It has the same classic taste in half the time…or less.

Potato soup on the table in 30 minutes?! Yes please! I make almost all my soups in my Instant Pot now since it’s such a time saver. The Instant Pot has become one of my kitchen essentials and if you don’t have one I highly recommend looking into it.

Now, onto the recipe!

Savory Potato Soup Ingredients

Soup Base Ingredients

  • 1 tsp butter
  • 1 tsp minced garlic
  • 3 large russet potatoes
  • 4 cups chicken broth
  • 1 cup heavy whipping cream
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 tsp thyme
  • 2 tbsp cornstarch

You can use milk instead of heavy whipping cream if you’re looking to make it a bit healthier but your soup won’t be as creamy. I recommend going no lower than 2% and whole milk will work better.

The thyme adds great flavor and makes this a delicious savory potato soup. You can also use rosemary as that pairs well with potatoes too!

Any of these flavors will go well with potato soup.

  • Cooked/Diced bacon
  • Diced green onions
  • Shredded Cheddar Cheese

How to make potato soup in an Instant Pot

1- Peel potatoes and cut into 1/2 inch pieces. You’ll need about 6 cups of diced potatoes.

2 – Turn InstaPot to the Saute setting. Add butter. Once melted add minced garlic and cook about a minute until it browns a bit.

3 – Turn off InstaPot. Add chicken broth, salt, thyme or rosemary, pepper, and 6 cups of diced potatoes. Add a little extra liquid if potatoes aren’t mostly submerged.

4 – Put the lid on the InstaPot and check that it’s set to sealing. Set on high pressure for 5 minutes.

5 – When the timer goes off do a quick release of the pressure. (No need to let it natural release first or your potatoes may overcook)

6 – Once the steam stops open the lid carefully. Add the heavy whipping cream. (You can use milk instead if you prefer)

7 – Turn the saute function back on. Dissolve the cornstarch in cold water and add to your soup stirring continuously. Let it heat until it’s bubbly and starts to thicken. If it’s not thickening to your liking you can add a bit more cornstarch (remember if you plan to add cheese that will also thicken the soup.

My grandma says the trick with cornstarch is to make the cornstarch/water mixture the same consistency that you want your dish. If you add a bunch of water to your cornstarch and it’s very thin then it won’t actually thicken your soup. Add just enough cold water to dissolve the corn starch.

8 – Add toppings to the entire soup or allow everyone to add their own to their bowl.

Don’t have an Instant Pot?

You can still make this savory potato soup in the traditional stovetop fashion. You’ll need to make a rue at the beginning instead of adding cornstarch at the end. It will need to cook for 45-60 minutes until the potatoes are tender before adding the cream and cheese.
