Pumpkin Pie Overnight Oats {with Caramel}

Whether you like pumpkin only in the fall or all year round there are lots of delicious things you can add a pumpkin twist to. These overnight oats get spiced up with pumpkin, spices, and the secret ingredient…caramel! Read on to grab the recipe.

Overnight oats are a great way to make breakfast easy. The fridge does most of the work so the prep time is just about 5 minutes!

Since you make it in a mason jar it’s easy to grab and take on the go to eat on the road, at work, or wherever you might be rushing off to in the morning.

Ingredients for Pumpkin Pie Oats

  • 2 pint-sized mason jars
  • 2 cups old fashioned oats
  • 1 cup plain greek yogurt
  • 3 tbsp canned pumpkin
  • 2 cups milk or milk alternative
  • 1 tbsp chia seeds
  • 1 tsp pumpkin pie spice
  • 6 graham crackers (crumbled)
  • 6 tbsp caramel syrup
  • Optional: 3 tbsp chopped pecans

Step 1 – Create your Oat Mixture

For the base of this recipe, you’ll need to mix up your oat mixture.

In a bowl add your oats, yogurt, pumpkin (use the plain canned pumpkin, NOT pumpkin pie mix), chia seeds, and pumpkin pie spice.

Pour in 2 cups of milk, adjust the amount up or down to make the oats thinner or thicker.

Mix everything together until it’s combined.

Step 2 – Create your layers

Now it’s time to make some tasty layers! You’ll be making 2 layers in each jar. Make them thinner if you want to create more layers.

In the bottom of each mason jar place 1 crumbled graham cracker, 1 tbsp caramel (caramel ice cream topping works great), and pecans or other nuts of your choice if desired.

Next, add 1/4 of the oat mix to each jar, about 1/2 cup.

Add a 2nd layer of graham cracker, caramel, and nuts.

Add an additional layer of your oat mixture. (This layer should use the remaining oats.

Give the top a sprinkle of cinnamon and then you can add another layer of crumbled graham cracker, caramel, and nuts as a topper.

Step 3 – Overnight Them!

Seal both jars and place them in the fridge overnight…or at least 6 hours.

Take them out and enjoy a delicious and festive breakfast.

Ingredients

Oat Mixture

  • 2 cups old fashioned oats
  • 1 cup plain greek yogurt
  • 3 tbsp canned pumpkin
  • 2 cups milk or milk alternative
  • 1 tbsp chia seeds
  • 1 tsp pumpkin pie spice

Toppings

  • 6 graham crackers (crumbled)
  • 6 tbsp caramel syrup
  • Optional: 3 tbsp chopped pecans

Instructions

  1. Create your oat mixture by combining all 6 ingredients.
  2. Using 2 pint sized mason jars, fill the bottom with 1 crumbled graham cracker, 1 tbsp of caramel, and 1/2 tbsp of nuts if you're using them.
  3. Place 1/4 of your oat mixture into each jar, it should be around 1/2 cup.
  4. Next, put another layer of the toppings in each jar.
  5. Split the remainder of the oat mixture between the two jars.
  6. Add a final layer of toppings if desired.
  7. Seal each jar and refrigerate overnight.
