Homemade Ice Cream Cake
This easy homemade version of an ice cream cake uses ice cream sandwiches so it comes together quick and easy.
You’ll only need 3 ingredients plus an optional topping to give it some extra pizzazz.
Ingredients
- 1 box (12 sandwiches) regular size ice cream sandwiches
- 1 cup coarsely chopped Oreo cookies
- 1 (16 ounce) container frozen whipped topping (Cool Whip or similar), thawed and divided
- Sprinkles
How to put your ice cream cake together
1 – Fold the 1 cup of chopped/crushed Oreos into 2 cups of whipped topping and set aside for later.
2 – On a flat platter create a layer of 6 ice cream sandwiches in a row.
You can use plain vanilla or a fun flavor like neapolitan, mint, etc.
3 – Top with a layer of the cookie and Cool Whip mixture.
A silicone spatula is a great tool for spreading the mixture into a smooth even layer.
4 – Add another layer of 6 ice cream sandwiches on top of the Cool Whip layer.
5 – Use the remaining Cool Whip to “frost” your cake.
6 – Optional: Top with something fun like sprinkles, mini m&ms or more crushed Oreos.
7 – Freeze until you’re ready to serve. The whipped topping won’t get overly hard so you’ll still be able to cut your cake.

This ice cream cake is quick and basic. You can jazz it up by using different flavors of ice cream sandwiches.
Want it to be bigger? Add another layer of filling and sandwiches! (You’ll need to purchase or make extra Cool Whip to do this.)
Experiment with adding a thin layer of caramel or chocolate sauce on the first layer of ice cream sandwiches before you add the Cool Whip.
