Classic Easter thumbprint cookies

Thumbprint cookies are a classic treat. I still remember stopping by the bakery counter and getting one when grocery shopping with my mom.

While you can fill the center with all sorts of deliciousness these are filled with the traditional chocolate ganache and topped with an Easter candy for a festive treat.

Fun Easter Cookies

These tasty, buttery cookies with a sweet chocolate center will make a perfect Easter cookie!

Ingredients

Cookie ingredients

  • 2 1/4 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup butter (2 sticks)
  • 3/4 cup sugar
  • 2 large egg yolks
  • 1 tsp vanilla extract

Ganache center ingredients

  • 1 cup chocolate chips
  • 1/2 cup heavy whipping cream

How to Make this recipe

1 – Preheat your oven to 350 degrees

2 – In a medium sized bowl mix together the flour, baking powder, and salt.

3 – Using a separate large bowl and a hand mixer, or a stand mixer, cream together the butter and sugar.

4 – Once those are light and fluffy and in the egg yolks and vanilla and mix until everything is well combined.

5 – Add the flour mixture to the butter mixture in parts. Mix until it’s just combined and the dough begins to form. Don’t over mix the batter.

6 – Form the dough into 1 inch balls and place them on a cookie sheet lined with parchment paper or a silicone baking mat.

Place them 1-1.5 inches apart.

7 – Create a depression in the center of each ball. You can use the back of a 1/2 tsp measuring spoon dusted lightly with flour to do this.

8 – Bake for approximately 20 minutes. They should be slightly golden brown.

9 – Allow to cool for several minutes before removing to a wire rack to cool.

Allow the cookies to cool completely before moving on.

10 – Place the chocolate chips in a heat-proof bowl.

11 – Place a small pot on the stove and heat the heavy cream until it’s steaming but not boiling. If it boils the cream may curdle.

12 – Once the cream is hot poor it over the chocolate chips and whisk to mix. You now have chocolate ganache for the centers.

13 – Transfer the ganache to a piping bag or squirt bottle and fill each cookie with choclate.

14 – Top with a Robin’s egg or Easter M&M candy to give them an Easter feel.

Ingredients

  • 3/4 cup sugar
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • Pastel easter candies

Chocolate Ganache

  • 1 cup chocolate chips
  • 1/2 cup heavy whipping cream

Instructions

  1. Preheat the oven to 350 degrees
  2. In a medium-sized bowl combine the flour, baking powder, and salt.
  3. In a large bowl or stand mixer cream the butter and sugar together until it's light and fluffy.
  4. Add the egg yolks and vanilla and mix until well combined..
  5. Add the dry ingredients in parts and mix until combined.
  6. Roll dough into a 1 inch balls.
  7. Place them 1-1.5 inches apart on a baking sheet (covered with parchment paper or silicone baking mat).
  8. Bake for approximately 20 minutes, until beginning to brown.
  9. Allow to cool a few minutes on the pan before transferring to a rack.
  10. While they cool make the filling.
  11. Pour chocolate chips into a heat safe bowl.
  12. Warm heavy whipping cream on the stove in a small pot until it begins to steam (avoid boiling or it may curdle).
  13. Pour over the chocolate chips and whisk together until well blended together.
  14. Transfer to a ziploc bag or piping bag. Snip the tip and pipe into the depression in each cookie. (Cookies should be cooled before adding the filling).
  15. Top with a pastel Easter candy like Robin's eggs or M&Ms.
